For my next trick I will turn this can of chickpeas into a quick and tasty meal. I’m sure this recipe exists elsewhere but for your sake I have reinvented it, probably made it worse, and documented it here. Enjoy.
1 can of chickpeas
1 chopped onion
1 garlic clove
2 tbs of cumin
Plain yoghurt
Parsley
Crushed Chillies
Lemon Juice
Empty and drain a can of chickpeas. Place a sheet of paper towel on a large plate and dispense the drained chickpeas on top. Microwave the chickpeas for 5 minutes. Note: The aim of microwaving is to dry out the chickpeas and increase surface areas. I tried microwaving without the paper towel and it did not dry out the chickpeas and instead “steamed” them.
Add a large amount of your favourite oil into a fry pan and heat. Add the crushed garlic and the chopped onion to a pan, along with salt, pepper and crushed chillies. Continue to fry as the chickpeas microwave.
Add the chickpeas to the frying pan, along with the cumin and parsley. You may need to add more oil as the chickpeas absorb the oil. Continue to fry for ten minutes.
Add a layer of plain yoghurt to the bottom of a bowl and add the fried chickpeas on top. Top with a splash of lemon juice and if you like so sriracha.
